Pineapple Vinaigrette
Light and refreshing, just as a summertime salad dressing should be. Perfect over a Shrimp, Mango, and Jícama Salad.
Recipe Yield: 1 gallon
Ingredients

| 3 c | Rice wine vinegar |
| 5 c | Pineapple juice |
| 1 bag | Foothill Farms Italian, Caesar & Vinaigrette Dressing Mix (#V408) |
| 1/2 gal | Oil |
Instructions
In large mixing bowl add contents of package (7.6 oz) to vinegar and fruit juice. Mix well with electric mixer at high speed.
Continue mixing and slowly add oil. Mix at high speed 2 minutes, until well blended.
