Green Goddess Dressing

Made from Foothill Farms Ranch Dressing Mix, it's a blend of sour cream, mayo, parsley, chives, lemon juice and anchovies.

1  qt Sour cream
1  qt Water
1  bag Foothill Farms® Ranch Dressing Mix (#V400 or #V402)
3  c Fresh chopped parsley
1 1/3  c Fresh chopped chives
3/4  c Fresh lemon juice
4  tsp Anchovy paste
1/2  gal Mayonnaise
Instructions

  1. In large bowl, add Ranch Dressing packet (3.2 oz) to sour cream and water. Mix well with wire whisk or electric mixer at low speed.

  2. In a food processor, puree parsley, chives, lemon juice and anchovy paste. Add to ranch mixture and mix to combined. This will give the dressing its green color.

  3. Add mayonnaise to bowl and continue mixing at low speed about 2 minutes until smooth.

  4. Refrigerate 3-4 hours so dressing will thicken. Stir before using. Store in refrigerator.
